We find that this has a definite bearing on the taste of the meat. The beef is also hung in the traditional manner. The sheep live outside year-round, with the cattle being housed indoors from October to April. We take care to ensure that the animals are reared under the highest practical standards of welfare. Customers can visit the farm to collect their order and see for themselves the conditions that the animals live in. The meat is processed at a local abattoir and we have our own refridgeration unit at the farm for storage of the meat. Care is given to the countryside, combining agriculture with care for the environment. The farm is in the 'Tir Gofal' environmental scheme and we won a 'True Taste' award in 2004/5 for our own reared lamb and pork. We were 'highly recommended' in the awards last year for our lamb and received a certificate to prove that we reached the True Taste standard.
